Berry Crumble Bars

Instructions
- Preheat oven to 350F and line an 8"x8" baking pan with parchment paper
- In a medium bowl, mix together the flour, brown sugar, salt, and butter by hand, or with the paddle attachment on a stand mixer, until a crumbly dough forms.
- Press at least half of that dough into the baking pan and partially bake around 10-15 minutes. Remove from oven and set aside to slightly cool
- To the remaining dough, add the granulated sugar and mix together. Set aside
- In a separate bowl, mix together the berries, cornstarch, vanilla extract, and lemon zest. Spoon this mix evenly over the partially-baked dough in the pan. Dollop the jam over the berry mix*
- Sprinkle the remaining dough-crumble mix over the berries and then bake for 35-40 minutes until the crumble is a golden brown.
- Remove from oven and allow to fully cool. Enjoy!**
Notes
*I like to thin out the jam a tiny bit with some water and mix with the berries-cornstarch mix in the bowl, and then spread it evenly over the partially-baked dough. If using frozen berries, it is perfectly ok for the berries to fall apart.
**I like to enjoy these crumble bars when they are cold.
***Can be made dairy-free by substituting non-dairy butter for the unsalted butter in the recipe
